Recipe for Mommy & Me Mini Apple Pies

Mini Apple Pies Ingredients


4 apples
1 & 1/2 c water
1/4 c freshly squeezed lemon juice
1/2 c corn starch
1/2 tsp cinnamon
1 & 1/2 c brown sugar
2 pie crusts


1.Peel, core and quarter apples.
2.Place apples in saucepan and cover with 1 &1/2 c of water.
3.Add 1/4 c lemon juice to mixture.
4.Bring apples to boil.
5.Cover and lower heat, cook until soft.
6.Pour mixture into immersion blender and blend for 5 minutes. Be sure to leave some chunks.
7.Mix brown sugar, cinnamon and corn starch until desired sweetness and consistency.
8.Preheat oven to 350.
9.Prepare ramekins.
10.Spray lightly with cooking spray.
11. Cut pie crust into fourths.
12. Press 1/4 of crust into ramekin.
13. Spoon apple mixture on top of crust, be sure not to over fill.
14. Layer another 1/4 of the crust on top. Poke holes with fork to vent.
15. Bake for 45 minutes. Enjoy!
